Coconut Chocolate Chip Mishmash Cookies
Gluten-dairy-refined sugar free with vegan options
All ingredients are gluten free and naturally occurring and with the exception of the chocolate chips and/or gf flour, which were made with minimal processing. Check your ingredients for any additives or processing procedures.
Ingredients:
- 1/4 cup coconut flour
- 3/4 cup gluten free AP flour (I like arrowhead mills)
- 1.5-2 cups GF rolled oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2-1 cup coconut sugar
- 3/4-1 cup veggie or coconut oil
- 4 eggs***
- 1/2 cup raw coconut shreds
- 1/2-1 cup nuts (optional. I’ve used walnuts and almonds before)
- 1-1.5 cups chocolate chips*
*Check ingredients
***For vegan equivalent, use an egg replacement such as flax or chia eggs, but alter liquid amount by either adding a few tbsp more of oil or water.
- Whisk dry ingredients and blend in wet.
- Stir in nuts, chocolate chips, and coconut last.
- Bake at 350*F/176*C for 8-12 minutes or until golden and bottoms begin to brown. Transfer to cooling rack. Store in a cool, dry container that seals.
