It bugs me when people are unnecessarily mean. Like, you didn’t have to make that comment. You could have just kept your mouth shut and left that person not feeling bad about themselves. What do you gain from making someone else feel like shit? Nothing of substance. Maybe a fleeting moment of power but that’s gone as soon as it comes so why? There’s enough unhappiness in the world without you adding to it.

When I first shared with people that I was “going paleo" everyone’s reactions were the same. “What do you eat??!" As if eating real food is such a bizarre concept?! My response? “We are actually eating REALLY good food" And it’s not a lie, my cooking skills have improved greatly over the past 4 months and while there have been a couple cooking fails (which admittedly sometimes led to late night pizza delivery) I eventually tackled the learning curve that is paleo. I’m certainly not perfect yet but I’m getting there! And am soo much closer than I would be had i never started. :) I have also begun posting pictures of our dinners on Facebook which my friends have started calling “pretty food" saying that my husband and I always have such pretty food… And we do… My salmon is much more beautiful (and more satisfying) than your bowl of ramen or chicken nuggets will ever be. ;) My go to salmon recipe: Spice Smothered Salmon 1 T smoke paprika 1/4 ts cayenne pepper 1/4 ts cumin 1/4 ts black pepper 1/4 ts salt 1/2 ts garlic powder 1/2 ts onion powder 1 Tb light olive oil One piece of salmon thawed and at room temperature. Per heat oven and a cast iron skillet to 350. Combine all spices in a small bowl. Place salmon on a plate or in a shallow dish, cover with 1 Tb of oil. Sprinkle spices over salmon and massage the spices in all over the piece of fish. Take cast iron skillet out of the oven. Careful it will be hot!! Place salmon on cast iron skillet. Bake in preheated oven for 8-10 minutes or until cooked to your preference. Plate your fish, add a squeeze of lemon or lime if you like. Take pictures to show off your “pretty food" to friends on Facebook. Dig in!! Hope you enjoy this simple salmon recipe. It is one of our favorites!
