baking soda + cocoa powder (not dutch processed) also alkalizes enough in chocolate muffins/cakes/cupcakes/what have you that they don’t usually require any additional binding or rising agent. (The reason dutch processed cocoa powder doesn’t work for this is because it’s already been alkalized)
I’ve also used baking soda + apple cider vinegar in a couple other vegan muffin recipes, and again, they bind & rise wonderfullywhen i go full vegan i am going to need this
