Mint Chocolate Chip Protein Oatmeal
One of my favourite oatmeal recipes, if you’ve got a sweet tooth then this one’s for you !Ingredients:
- 1/3 cup of plain oatmeal (steelcut, old fashioned or quick oats work exactly the same)
- 1/2 serving (3oz of plain fat free greek yogurt)
- 1/2 tbsp semi-sweet/dark chocolate chips
- green food coloring
- 1 scoop of chocolate protein powder
- 2 drops of peppermint extract
- Optional: cinnamon, Stevia/Splenda, unsweetened cocoa powder for a dark chocolate flavour
Directions:
- Cook your oats with water/milk according to the packaging
- Stir in the protein powder and optional ingredients if desired.
- Place your oats in the fridge/freezer for at least 30 minutes to allow it to cool. (You could eat it hot but allowing it to chill makes it more dessert-like)
- In a separate bowl mix together 2 drops of green food coloring, the greek yogurt,and 2 drops of peppermint extract as well as some more Stevia/sweetener of your choice.
- Once your oats have chilled, remove them from the freezer and spoon the greek yogurt over top.
- Sprinkle on the dark chocolate chips and enjoy!
