Pesto Zucchini Pasta with smashed avocado side
Ingredients:
Zucchini pasta:
4 Zucchini’s (peeled into long slices)
3 Tbsp Pesto
1/2 long red chilli
1 clove garlic (crushed)
1 handful of basil
Salt and Pepper to tasteSmashed Avocado:
- 1 Avocado (smashed)
- 1 Tbsp lemon juice
- 1 tsp Olive Oil
- Salt and Pepper to taste
Method:
Preheat pan with some olive oil. Put in zucchini and garlic first cook for a few minutes, combine other ingredients and cook until zucchini is soft.
In a separate bowl combine the avocado, lemon juice olive oil and salt and pepper and mix.
